I would like to use a double kayak, should I specify this before booking?

Yes, it is preferable, otherwise you might not be able to be pleased. Obviously you will need to bring a good paddling partner with you. For first-time paddlers, we usually do not recommend using a double kayak in order to make it easier to learn the basic movements for guiding the kayak.
